Cabbage Sauerkraut Bacon Side Dish

Yields

serving for 4 - 6

Ingredients

4 slices of high quality nitrate free bacon - cut into small pieces and fried in large frying pan

3 onions - slices and halved

3 organic apples - diced small

1 small head of red cabbage - shredded

1 cup sauerkraut

1/2 cup golden raisins

salt and pepper

Directions

Saute bacon until almost crisp (about 12 minutes)

Add onions and cook until almost clear (about 12 minutes)

Add apples and cook until soft (about 10 minutes)

Add red cabbage and cook for about 20 minutes or until it reaches desired softness

Add sauerkraut  and golden raisins (or leave it cold and place on top of hot dish to preserve the probiotics)

Cook for another 5 minutes until all ingredients are mixed thoroughly


Notes

This side dish would be amazing with any pork tenderloin or pulled pork dish
