Paleo Power Snacks


Ingredients

12 Medjool dates - pitted and chopped

2/3 cup sunflower butter (can substitute almond or cashew butter)

6 TBS coconut oil - melted

2 cups gluten free rolled oats

6 TBS unsweetened organic coconut flakes

2-3 TBS Chai seeds

2-3 TBS Hemp seeds

1/2 cup or more dried blueberries or cranberries

Directions

  1. Pit the dates and chop, add to Cuisinart
  2. Add nut butter and coconut
  3. Blend until dates are finely chopped
  4. Add chia and hemp seeds, blend for a few more seconds
  5. Add dried fruit and oats, pulse the mixer so that the mixture stays coarse, but that it starts to form one large ball
  6. Use a small scoop to make round cookie, roll into ball if desired or keep half-moon shape.
  7. Place cookies on parchment, cover and chill in freezer for about 20 minutes.
  8. Take firm cookies and place in a container and store in the refrigerator until ready to eat
